Stringer Stagecoach Cabernet Sauv 2021 750ml triple11The hand picked fruit was destemmed, hand sorted and moved to a combination of a closed top stainless tank and small new 60 Gallon French oak barrels for fermentation. After a 5 day cold soak the must was inoculated. During fermentation the tank was pumped over 2 3 times a day and the barrels spun to maximize extraction. The wine stayed on its skins for 21 days and pressed at dryness. The barrel fermented wine and tank fermented wine was kept separate

and bottled at 88 ppm

This wine is just beginning to evolve but shows so much already with delicious laced flavors of deep espresso and dark chocolate

it is lighter than you would expect but lacking in none of the intensity you would expect of this wine
